What is this course about?
This course will give you an introduction into the exciting career of catering. mIdeal for those looking to become professional pastry chefs or for those wanting to progress in their careers, for individuals who enjoy this area of cookery as a hobby and for those employees looking to further their knowledge and skills in this area.
What will I learn on this course?
You will be involved in both practical & theory sessions which include: knowledge of health & safety, food safety, preparing & cooking a range of products from fermented dough to hot and cold desserts, puddings, cakes and pastry products and improve your employment opportunities in the catering industry.
Entry Requirements
Working at Level 1 on our college online assessment or a minimum GCSE grade D/3 GCSE or Level 1 English qualification.
What will this course lead on to?
This qualification can help you to progress in your career as a pastry chef, or to start your own business. You may wish to consider the Level 2 Diploma in Professional Cooking Qualification.
How will I be assessed?
During your programme you will be assessed by observation of your practical skills, short answer papers, supplementary questions and completion of a portfolio.

Other Costs:
Other costs associated with the course include; a small fee per week for ingredients, which will be discussed at enrolment – student’s work can then be taken home. There is a requirement to purchase the correct professional dress code for the kitchen environment. You can purchase your own black polo shirt, full black trousers, and a flat covered black shoe. If you are looking to progress further onto other catering qualifications or within the industry e.g., you may wish to purchase the full uniform and kit from the college.
Facilities:
You will work in a range of kitchens including a newly refurbished production kitchen with ceramic cookers, wok, larder kitchen and pastry kitchen. All practical sessions will help give you the practical skills, confidence and the overview of what the catering and hospitality industry can offer.
