What is this course about?
You will work in our professional kitchens to prepare and cook complex dishes. You will cover all the key areas including larder, production and pastry. You will work with the Level 1 and Level 2 students who will assist you to develop your supervisory skills. You will have the opportunity to take part in prestigious external events with national catering companies. . Classes will consist of both 16-18 and adult students.
What will I learn on this course?
You will learn a range of skills supported with theory which will include preparing and cooking complex dishes, teamwork, and control of resources, safe working environment, advanced fish, meat, poultry, dough, pastry and hot and cold desserts.
Entry Requirements:
Level 2 Diploma in Professional Cookery plus working at Level 2 on our college English assessment or a minimum GCSE grade C/4 or Level 2 English qualification (including reading and writing). You will also have a college admissions interview.
What will this course lead on to?
You will have the opportunity to progress to university on courses such as event management or you may decide to progress into a wide choice of employment within the catering industry.
How will I be assessed?
During your Cookery programme you will be assessed by observation of your practical skills, short answer papers, and final written and practical exam.
Are there any costs associated with the course?
You will be expected to purchase your full kitchen uniform, full restaurant uniform and basic set of knives which costs approximately £225 (cost TBC for 2023 – there may be help available with the cost of the kit/equipment). The college will help you order these. Kits can be ordered in September.
Course fee: £5,421 (TBC) – If you are 19 or over and studying a level 3 qualification you may be eligible for an Advanced Learning Loan. These loans will cover the full course fee for the duration of your course.

Facilities:
You will learn in our Centre of Excellence in Catering and Hospitality and will work in a range of kitchens, including newly refurbished production kitchen with ceramic cookers, wok, larder kitchen and pastry kitchen. Part of your studies will include preparing and cooking dishes for our very popular restaurant Scholars. All practical sessions will help give you the practical skills, confidence and the overview of what the catering and hospitality industry can offer.
